Staying in means we need some creative new ways to work with the food we have. Who says breakfast is just for the morning? We certainly don’t! So we put together some of the best breakfast recipes for any meal of the day.

Bacon & Egg Bites

Breakfast egg muffins are an easy grab and go option for busy days. They are quick and easy to throw together and last for several days in the fridge.

What You’ll Need

  • Cooking spray

  • 8 slices of cooked bacon or jowl bacon, chopped into 1/2 in squares

  • 8 large eggs

  • 1/4 cup whole milk

  • 1 large red bell pepper, chopped

  • 2 green onion, chopped

  • 1/2 teaspoon salt, 1/2 teaspoon pepper

  • 1/2 cup of sharp cheddar cheese, shredded

The Recipe

  1. Preheat the oven to 350 degrees. Spray a regular sized muffin pan with cooking spray.

  2. Add eggs and milk to a large bowl and whisk.

  3. Add bacon, bell pepper and green onion to the egg mixture. Add salt and pepper and mix.

  4. Add 1/2 of the cheese to the bowl and mix everything together well.

  5. Divide the egg mixture between the egg cups.

  6. Sprinkle each cup with remaining cheese.

  7. Bake for about 20-22 minutes, until bites are set

Breakfast Burrito 

A classic dish across the states that can be made with a variety of protein options.

What You’ll Need

  • 1 package of ground breakfast sausage or chicken sausage

  • 1 onion, chopped

  • 1/2 red or green pepper, chopped

  • 6 eggs¬†

  • 1 cup mexican shredded cheese

  • Large tortillas¬†

  • Salt & pepper¬†

  • Salsa¬†

  • Sour cream

The Recipe 

  1. Add oil and sausage in a large skillet on medium to high heat. 

  2. While the sausage is cooking, whisk your eggs in a bowl. Add milk for fluffier eggs. 

  3. Once the sausage is done cooking set aside, saute the onion and pepper in the same skillet until tender.

  4. In a separate skillet, add oil or butter over medium heat and pour the eggs in and cook until done. 

  5. Warm tortillas in skillet, divide sausage & veggies into each tortilla. 

  6. Top with eggs, cheese, salt & pepper. 

  7. Fold the tortilla. Add salsa and sour cream on the side as desired

Breakfast Skillet 

What You’ll Need

  • 1 package breakfast sausage links, chopped

  • 1 tablespoon canola or olive oil

  • 1 large chopped yukon potato

  • 1 chopped onion

  • 1 sliced avocado

  • 1 cup salsa¬†¬†

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1/4 cup canned tomatoes

  • Salt & pepper¬†

  • Cast iron skillet¬†

The Recipe

  1. Preheat oven to 400*F.

  2. In a nonstick pan, add oil, sausage and spices over medium heat until cooked. 

  3. Chop potato and onion into small pieces. This can also be substituted with hashbrowns if you prefer thinner potatoes. 

  4. Combine potatoes, onions and sausage into a cast iron skillet with olive oil. 

  5. Put the skillet in the oven for 30 minutes. 

  6. While cooking skillet, prepare gravy using a blender or blender cup.

  7. Remove from the oven and top with avocado and salsa. 

  8. Enjoy with toast or tortillas. 

Steak & Eggs 

What You’ll Need

  • 1 NY Strip Steak

  • 4 pieces of french bread or a baguette¬†

  • 1/2 cup shredded cheese (we prefer cheddar or mozzarella)

  • Eggs (1 egg per piece of bread)

  • Butter¬†

  • Salt & pepper¬†

The Recipe

  1. Season your steak with salt and pepper.

  2. Add butter to a large skillet over medium-high heat. Cook your steak to your preference.

  3. When the steak is done cooking, butter each side of the bread and add to a skillet. Cook on each side for 2 minutes. When done, add the cheese to your bread. 

  4. In one of your skillets add butter and crack your eggs.  

  5. Cook the eggs for 5 to 6 minutes until the whites are set. 

  6. Slice the steak gainst into 1/4 pieces. 

  7. Top the toast and cheese with your sliced steak.

  8. Season with salt & pepper (can also add chopped chives for more flavor).
